Cottage cheese-dill dressing

Measure Ingredient
⅓ cup Nonfat buttermilk
½ cup Nonfat cottage cheese
1 tablespoon Lemon juice
1 tablespoon Nonfat Parmesan cheese
1 Scallion, chopped
1 Clove garlic, minced
1 tablespoon Fresh parsley, chopped
½ teaspoon Dried dill
¼ teaspoon Black pepper

Combine all ingredients in food processor or blender. Process until smooth.

Chill in a covered container 4 hours until serving. Serves 4. 31 calories per 3½ Tbsp. serving. 0 g fat. VARIATION: Substitute ⅓ c. plain nonfat yogurt for cottage cheese. Delete parmesan cheese & dill. Add 2 Tbsp. apple cider vinegar and 2 Tbsp. honey.
