Kathy's sweet potatoes

Ingredients

3cupsMashed sweet potatoes; fresh or canned
½cupSugar
2tablespoonsMelted margarine
cupSkim milk
¼cupPlus 2 T buttermilk
1Egg + 2 egg whites; well beaten
1teaspoonVanilla
¼teaspoonSalt
cupFirmly packed brown sugar
¼cupFlour
tablespoonButtermilk
1tablespoonMelted margarine
cupChopped pecans

Directions

TOPPING

Combine sweet potatoes, sugar, 2 T melted margarine, skim milk, ¼ c + 2 T buttermilk, egg, egg whites, vanilla and salt. Mix well and pour into an 8-inch square baking dish that has been sprayed with Pam. In a small bowl, combine topping ingredients; sprinkle evenly over potato mixture. Bake at 350F for 25-45 minutes or until set and top is browned.
