In a medium-size saucepan, bring the water to a boil over moderately high heat - about 3 minutes. Pour the boiling water into a warmed teapot and add the tea bags, mint and lemon peel; cover and steep until cool - about 20 minutes. Remove and discard the tea bags.
Strain the tea into a 2-quart pitcher and stir in the apple juice and lemon juice. Fill four 12-ounce glasses with ice cubes and divide the apple-mint tea among them. Stir briskly and garnish each drink with a mint sprig, if you like. Preparation time: 10 minutes
