Hot avocado salad

Ingredients

1Head romaine lettuce; chopped
1teaspoonMustard powder
1tablespoonWhite wine vinegar
1tablespoonOlive oil
2teaspoonsChopped fresh basil
Salt and black pepper to taste
4Scallions; trimmed and chopped
4Ribs celery; diced
1mediumGreen pepper; seeded and diced
½Avocado; peeled and diced
½Cucumber; peeled and diced

Directions

Tear lettuce and place in large bowl. Mix together mustard, vinegar, olive oil, basil, salt and pepper. In skillet with hot oil, saute scallions, celery and green pepper. Add avocado and cucumber to skillet. Add vinaigrette to skillet. Pour skillet mixture over lettuce in bowl. Toss.

Serve warm.
