Green tea salad dressing

Measure Ingredient
1 teaspoon Green tea leaves; (gyokuro is best but
\N \N ; Sencha or Gunpowder
\N \N ; will do)
100 millilitres Hot water; (3 1/2fl oz)
1 teaspoon Caster sugar
2 \N Strips lemon zest
\N \N Salt and freshly ground black pepper
2 tablespoons Hazelnut oil
2 teaspoons White wine vinegar

Infuse the tea leaves in the hot water (don't use boiling water) for 5 minutes then strain into a pan. Add the sugar and bring to the boil and simmer until the liquid is reduced to 2-3 tbsp. Add the strips of lemon zest and leave to infuse until cold.

Remove the lemon zest, add the oil, vinegar, salt and pepper to the liquid and whisk.
