|1 teaspoon||Green tea leaves; (gyokuro is best but|

|100 millilitres||Hot water; (3 1/2fl oz)|
|1 teaspoon||Caster sugar|
|2 \N||Strips lemon zest|
|\N \N||Salt and freshly ground black pepper|
|2 tablespoons||Hazelnut oil|
|2 teaspoons||White wine vinegar|
Infuse the tea leaves in the hot water (don't use boiling water) for 5 minutes then strain into a pan. Add the sugar and bring to the boil and simmer until the liquid is reduced to 2-3 tbsp. Add the strips of lemon zest and leave to infuse until cold.
Remove the lemon zest, add the oil, vinegar, salt and pepper to the liquid and whisk.
