Cucumber-cheese salad

Yield: 8 Servings

Measure Ingredient
8 mediums Fresh cucumbers
1 \N Spring onions or chives --
\N \N Choped
12 ounces Cottage cheese
½ cup Sour cream
7 tablespoons Lox -- choped
\N \N Salt
\N \N White pepper

Slit the cucumbers in two lengthwise. Do not peel them. Scoop most of the flesh and chop it up coarsely. Add the onion, cheese, sour cream, lox, salt and pepper and mix well. Fill into the cucumber shells and serve chiled on lettuce.
