Cucumber-mint salad

Yield: 4 Servings

Measure Ingredient

1 lg cucumber

1 sm onion -- chopped fine

1 TB fresh mint -- chopped

¼ c white vinegar

1 ts sugar

½ ts salt

½ ts lemon pepper seasoning

Peel cucumber and chop into ¼-inch cubes. Combine all ingredients in bowl and mix. Serve at room temperature. Serves 4.
