Cucumber salad^

4 servings

Quantity Ingredient
5 mediums Kirby cucumbers
Salt
2 smalls Onions, thinly sliced
1 cup White or cider vinegar

Peel cukes and slice very thinly. Salt generously in a loarge non--metallic bowl. Weight down and let stand an hour.

Drain, mix with onion and pour vinegar over top. Let stand 10 minutes before

serving.
