Cucumber-onion salad

Yield: 4 Servings

Measure Ingredient
\N \N Jolly mdfd30e-
2 \N Mild onions
2 larges Cucumbers
\N \N Salt
\N \N Water
½ cup Tarragon vinegar
1 teaspoon Sugar
½ cup Dairy sour cream
½ cup Tarragon vinegar
\N \N Chives; chopped, garnish


Peel onions and cucumbers, and cut into wafer-thin slices. Cover with salted ice-water and let stand in refrigerator for several hours. Drain, and add ¼ cup water, vinegar, sugar, salt and pepper to taste.

Cucumber-Onion Salad With Sour-Cream Dressing. After draining vegetables in recipe above, add ½ cup dairy sour cream and ½ cup tarragon vinegar.

Garnish with chopped chives.
