Sweet cucumber salad

Ingredients

| 1 | small | English cucumber | 
| 1 | small | Onion, sliced thinly | 
| 3 | tablespoons | White vinegar | 
| 2 | tablespoons | Lemon juice | 
| 2 | tablespoons | Vegetable oil | 
| 1 | tablespoon | White sugar | 
| ½ | teaspoon | Salt (optional) | 
| pinch | Pepper, or to taste | |
Directions
With fork, score cucumber lengthwise.  Cut in half, lengthwise, and slice thinly crosswise.  Slice onion thinly and combine in a bowl with the cucumber.  Whisk together remaining ingredients and pour over cucumber/onion mixture.  Refrigerate for at least 4-5 hours to allow flavours to blend.  Makes about 4 servings.
