Sweet cucumber salad

Yield: 1 servings

Measure Ingredient
1 small English cucumber
1 small Onion, sliced thinly
3 tablespoons White vinegar
2 tablespoons Lemon juice
2 tablespoons Vegetable oil
1 tablespoon White sugar
½ teaspoon Salt (optional)
\N pinch Pepper, or to taste

With fork, score cucumber lengthwise. Cut in half, lengthwise, and slice thinly crosswise. Slice onion thinly and combine in a bowl with the cucumber. Whisk together remaining ingredients and pour over cucumber/onion mixture. Refrigerate for at least 4-5 hours to allow flavours to blend. Makes about 4 servings.
