|1 cup||Light sour cream|
|1 cup||Cottage cheese -- 1% fat|
|1 teaspoon||Vanilla extract|
Place all ingredients in a 5-cup blender container. Cover; blend at high speed for 30 seconds. Scrape down sides of container; blend for 1 minute longer, or until smooth. Cover; refrigerate for up to one week. Makes 2 cups. Nutrition Analysis (per tablespoon): 15 calories, 1g protein, 1g carbohydrate, 0.5g fat, 0mg cholesterol, 35mg sodium. Note: Use in dips, spreads, salad dressings and baked goods to reduce the fat in your recipes. Use Creamy Blend I when a smoother, more fluid mixture is preferred; refer to the recipe for Creamy Blend II when cutting fat is most important.
