1 cup | Cranberries -- chopped |
1 cup | Carrots -- shredded |

½ cup | Applesauce |
2½ cup | Unbleached flour |
1⅓ cup | Granulated sugar |
1 tablespoon | Baking powder |
2 teaspoons | Baking soda |
½ teaspoon | Salt |
2 teaspoons | Cinnamon |
Preheat oven at 350. Prepare pan(s) with cooking spray and flour.
In a mixing bowl, combine apples, cranberries carrots, egg whites, and applesauce. In another mixing bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon. Fill prepared pan(s) ⅔ full. Bake for 20 to 25 minutes depending on pan size.
