Yield: 12 servings
|2 cups||Apples -- peeled/shredded|
|1 cup||Cranberries -- chopped|
|1 cup||Carrots -- shredded|
|2||Egg whites -- whipped|
|2½ cup||Unbleached flour|
|1⅓ cup||Granulated sugar|
|1 tablespoon||Baking powder|
|2 teaspoons||Baking soda|
Preheat oven at 350. Prepare pan(s) with cooking spray and flour.
In a mixing bowl, combine apples, cranberries carrots, egg whites, and applesauce. In another mixing bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon. Fill prepared pan(s) ⅔ full. Bake for 20 to 25 minutes depending on pan size.
