Cranberry (any size)

Yield: 12 servings

Measure Ingredient
2 cups Unbleached flour
1 cup Granulated sugar
1½ teaspoon Baking powder
½ teaspoon Baking soda
1 teaspoon Salt
¾ cup Orange juice
1 tablespoon Orange peel -- grated
2 tablespoons Applesauce -- at room
Temperature
1 Egg white -- whipped
1 cup Cranberries -- chopped

Preheat oven at 350. Prepare pan(s) with cooking spray and flour.

In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. In another mixing bowl, combine orange juice, orange peel, applesauce, egg white, and cranberries. Mix wet ingredients to dry ingredients just until moistened. Pour mixture into prepared pan(s).

Bake for 40 to 50 minutes depending on pan size.
