Crabmeat and bell peppers

Yield: 1 Servings

Measure Ingredient
1 cup Light cream
4 tablespoons Butter
½ teaspoon Ground nutmeg
2 tablespoons Cornstarch
1 teaspoon Lemon juice
¼ cup Dry white wine
1 teaspoon Salt
1 cup Cooked rice
2 cups Crabmeat
6 mediums Bell peppers

Cut off tops of bell peppers; remove seeds, wash and set aside. In a 4-up glass measure, place dream. Microwave on HIGH for 45 to 60 seconds or until hot. Mix in butter and nutmeg. In a small bowl, combine cornstarch, lemon juice, wine, and salt. Mix well. Add cream to mixture. Microwave on HIGH for 1 minute. Stir and microwave on HIGH for 1 to 2 minutes or until thickened. Combine with crabmeat and rice. Stuff bell peppers with crabmeat mixture. Sprinkle tops with paprika. Arrange stuffed bell peppers in a circle on a microwave safe serving platter. Cover with plastic wrap. Microwave on 80% power for 12 to 15 minutes or until crabmeat is done. Let stand 5 minutes before serving.
