Chitlin salad

| Juice of 1/2 lemon | ||
| ½ | cup | Diced celery |

| Salt and pepper -- to taste | ||
| Lettuce | ||
| Paprika | ||
| Mayonnaise | ||
Directions
Sprinkle the chitterlings with lemon juice and let stand for at least 1 hour. Add celery, mayonnaise, salt and pepper. Serve on beds of lettuce.
