Caribou pie

Measure Ingredient
2 pounds Caribou or moose steak
3 tablespoons Lemon juice
¼ cup Flour
1 teaspoon Chili powder
¼ cup Lard
½ teaspoon Mace
4 Bay leaves
½ teaspoon Fresh lovage or celery
1 cup Red wine
Rich pastry crust

Cut meat into 1" cubes & roll in lemon juice. Mix flour & chili powder; dredge cubes in mixture. Heat lard in large skillet & brown meat a few at a time. When all are seared; return to pan; add spices & red wine. Cover with cold water & bring to boil. Lower heat & simmer, covered, for ½ hour. Transfer meat to pie dish & top with crust. Bake at 400 oven for 20-25 minutes.
