Barbara bush's lemon bars

Yield: 36 Servings

Measure Ingredient
1 cup Margarine
2 cups Powdered sugar
2 cups Flour
4 teaspoons Lemon juice
2 \N Lemon rind; grated
4 \N Eggs; well beaten
2 cups Sugar
1 teaspoon Baking powder
4 tablespoons Flour
1 cup Shredded coconut

CRUST

FILLING

Mix margarine, powdered sugar and flour. Spread in 15x10" jelly roll pan.

Bake at 350~ for 15 minutes until pale tan. Cool. Mix remaining ingredients. Pour over crust. Bake for 25 minutes at 350~. Cut into bars.
