Apple pudding

Ingredients

5Med. size cooking apples
4Eggs, separated
½cupWhite raisins
Juice of 1/2 lemon
½cupSugar
½cupMatzo meal

Directions

Peel, core and grate apples. Sprinkle with lemon juice. Beat yolks until light. Gradually beat in sugar, continuing to beat until thick. Stir in lemon juice, apples, matzo meal and raisins. Beat egg whites in separate bowl until stiff but not dry. Fold whites into batter and pour into 2½ qt. greased casserole. Bake at 350 F. for 40 min. Serve hot.
