Waldine's creole potato salad

2Ribs celery; dice
4tablespoonsCreole mustard
1poundsSmoked turkey sausage; slice thin, saute 5 mins, drain
1cupFat-free mayo
¼cupParsley; chop
2Dashes Tabasco
Salt and pepper

Directions

Mix all ingredients and refrigerate until ready to serve. Sprinkle top with paprika and garnish with some pimiento-stuffed olive halves.
