French potato salad

Ingredients

14smallsNew red potatoes, scrubbed
3tablespoonsFresh parsley, chopped
2tablespoonsFresh dill
6tablespoonsChopped green onions
cupRed wine vinegar
¾cupOlive oil
2teaspoonsDijon mustard
4tablespoonsRed onion, finely chopped
1largeRed pepper, chopped (optional)
1Clove garlic, crushed
Black pepper, liberally ground

Directions

DRESSING

Boil potatoes in salted water until just tender (about 20 minutes).

Drain, cut in halves and let cool 5 minutes.

Combine red and green onions, pepper, dill and parsley with potatoes.

Whisk vinaigrette ingredients together and toss with potatoes while still warm.

Serve hot or cold.
