Tropical dessert salad

Yield: 6 servings

Measure Ingredient
1½ cup Mango (about 1 1/2 mangos)
¾ cup Fresh pineapple
1½ cup Melon (1/2 of a medium cantaloupe or 1/3 of a small honeydew)
¾ cup Kiwi (about 2 large)
½ cup Fresh orange juice
¼ cup Unsweetened flaked coconut
¼ cup Coarsely chopped unsalted peanuts

All the fruit must be peeled and cut into bite-sized pieces. Combine with the orange juice and coconut. Add the peanuts right before serving. Garnish each portion with a dab of Banana Whipped Cream, if you like.
