TOMATO MINT RELISH
[By: Tracy Pikhart Ritter] [Makes 1½ cups] Place all ingredients in a nonreactive saucepan. Bring to a boil, reduce to a simmer, and cook for 30 minutes over low heat. Cool before serving.
