Apple mint relish

Yield: 1 servings

Measure Ingredient
2.00 sweet red apples; eighth, cored,
1 and sliced into 1/4 pieces
1 juice of one lemon
¼ cup pineapple juice
2.00 tablespoon chiffonade fresh mint
1.00 pinch salt

In a mixing bowl, combine all of the ingredients together. Mix well.

Refrigerate until chilled. Serve with the "Crawfish And Goat's Cheese-Stuffed Leg Of Lamb With Rosemary Jus" (the recipe for which is included in this collection) or other similar dishes.
