|⅓ cup||Mint leaves|
|¼ cup||Olive oil|
|¼ cup||Orange juice|
|1 tablespoon||Balsamic vinegar|
|1 \N||Clove garlic -- minced|
|\N \N||Salt and pepper|
|2 pounds||Tomatoes (4 to 6)|
Wash, dry and finely chop the mint leaves. Combine the mint, olive oil, orange juice, vinegar, garlic, salt, and pepper in a glass bowl.
Slice the tomatoes and place in the dressing, turning the slices to coat evenly. Refrigerate for at least 1 hour. Reserve 4 slices tomato for Grilled Buffalo Burgers.
