Tangy ginger dressing - bon appetit

Ingredients

¼ | cup | Chopped peeled fresh ginger |
¼ | cup | Chopped onion |
¼ | cup | Chopped celery |
¼ | cup | Water |
3 | tablespoons | Distilled white vinegar |
3 | tablespoons | Vegetable oil |
2 | tablespoons | Finely chopped lemon peel (yellow part only) |
2 | tablespoons | Tomato puree |
½ | teaspoon | Sugar |
Directions
Combine all ingredients in blender. Blend on high until smooth, about 2 minutes. Season dressing to taste with salt and pepper.
The restaurant serves this dressing over a salad of shredded iceberg lettuce, sliced mushrooms and red bell pepper strips.
