Tangy ginger dressing - bon appetit

Ingredients

¼cupChopped peeled fresh ginger
¼cupChopped onion
¼cupChopped celery
¼cupWater
3tablespoonsDistilled white vinegar
3tablespoonsVegetable oil
2tablespoonsFinely chopped lemon peel (yellow part only)
2tablespoonsTomato puree
½teaspoonSugar

Directions

Combine all ingredients in blender. Blend on high until smooth, about 2 minutes. Season dressing to taste with salt and pepper.

The restaurant serves this dressing over a salad of shredded iceberg lettuce, sliced mushrooms and red bell pepper strips.
