Tangy ginger dressing - bon appetit

1 cup

Ingredients

Quantity Ingredient
¼ cup Chopped peeled fresh ginger
¼ cup Chopped onion
¼ cup Chopped celery
¼ cup Water
3 tablespoons Distilled white vinegar
3 tablespoons Vegetable oil
2 tablespoons Finely chopped lemon peel (yellow part only)
2 tablespoons Tomato puree
½ teaspoon Sugar

Directions

Combine all ingredients in blender. Blend on high until smooth, about 2 minutes. Season dressing to taste with salt and pepper.

The restaurant serves this dressing over a salad of shredded iceberg lettuce, sliced mushrooms and red bell pepper strips.
