Sunday night scrambler

Quantity Ingredient
cup Butter, margarine or
Bacon drippings
¾ cup Chopped onions
2 cups Cooked diced potatoes
12 Eggs, slightly beaten
¾ teaspoon Italian seasoning
teaspoon Salt
teaspoon Pepper
8 ounces Plain yogurt
½ cup Shredded swiss cheese

1) Saute onion and potatoes in 3 tablespoons butter in large skillet.

Remove. 2)Add remaining butter to skillet. Blend eggs, Italian seasoning, salt, pepper and yogurt. Pour egg mixture into skillet and cook over low to meduim heat, stirring gently. 3) Just before eggs set, stir in onions and potatoes. Remove from heat. Sprinkle cheese over top and serve.
