¾ cup | Chopped onions |
2 cups | Cooked diced potatoes |
12 \N | Eggs, slightly beaten |
¾ teaspoon | Italian seasoning |
1¼ teaspoon | Salt |
⅛ teaspoon | Pepper |
8 ounces | Plain yogurt |
½ cup | Shredded swiss cheese |
1) Saute onion and potatoes in 3 tablespoons butter in large skillet.
Remove. 2)Add remaining butter to skillet. Blend eggs, Italian seasoning, salt, pepper and yogurt. Pour egg mixture into skillet and cook over low to meduim heat, stirring gently. 3) Just before eggs set, stir in onions and potatoes. Remove from heat. Sprinkle cheese over top and serve.
