Stefen's melon and jicama salad

½Red onion; minced
1Orange; juice and grated zest of
1Lime; juice of
1Jalapeno; seeded and finely minced
1teaspoonMustard
½cupOlive Oil
Salt
Pepper
Lettuce Cups

Directions

Combine melon, jicama and red onion. Whisk together citrus juices, zest, jalapeno, mustard and olive oil. Season to taste with salt and pepper. Toss and let sit for 1 hour. Serve in lettuce cups.
