Jicama melon salsa

Yield: 8 Servings

Measure Ingredient
1 small Mango, peeled, pitted
1 Chili, serano, seeded and deribbed
Juice of one lime
1½ tablespoon Bell pepper, red, diced
½ cup Cantalope, diced
½ cup Honeydew melon, diced
2 tablespoons Cucumber, peeled, diced and seeded
½ cup Jicama, peeled, diced
2 teaspoons Cilantro, chopped
¼ teaspoon Salt
¼ teaspoon Pepper, black
2 tablespoons Sour cream

In a food processor or blender, puree lime juice, mango and chile.

Place diced vegetables and fruit in a mixing bowl, add puree and combine. Mix in cilantro, salt and pepper. Adjust seasonings to taste. Gently fold in sour cream. Serve with grilled fish or chicken.

Per serving = 28 calories, 1 g fat, 1 mg chol, 80 mg sodium. Calories from fat = 32%
