Jicama-melon salsa

1Chili, serano, seeded and deribbed
Juice of one lime
tablespoonBell pepper, red, diced
½cupCantalope, diced
½cupHoneydew melon, diced
2tablespoonsCucumber, peeled, diced and seeded
½cupJicama, peeled, diced
2teaspoonsCilantro, chopped
¼teaspoonSalt
¼teaspoonPepper, black
2tablespoonsSour cream

Directions

In a food processor or blender, puree lime juice, mango and chile. Place diced vegetables and fruit in a mixing bowl, add puree and combine. Mix in cilantro, salt and pepper. Adjust seasonings to taste. Gently fold in sour cream. Serve with grilled fish or chicken.
