Jicama-melon salsa

Ingredients

| 1½ | tablespoon | Bell pepper, red, diced |
| ½ | cup | Cantalope, diced |
| ½ | cup | Honeydew melon, diced |
| 2 | tablespoons | Cucumber, peeled, diced and seeded |
| ½ | cup | Jicama, peeled, diced |
| 2 | teaspoons | Cilantro, chopped |
| ¼ | teaspoon | Salt |
| ¼ | teaspoon | Pepper, black |
| 2 | tablespoons | Sour cream |
Directions
In a food processor or blender, puree lime juice, mango and chile. Place diced vegetables and fruit in a mixing bowl, add puree and combine. Mix in cilantro, salt and pepper. Adjust seasonings to taste. Gently fold in sour cream. Serve with grilled fish or chicken.
