Southern crab royal dnsr31a

1½ | tablespoon | Onion, minced |
2 | tablespoons | Green pepper, finely chopped |
3 | tablespoons | Margarine |
2 | tablespoons | Flour |
1 | teaspoon | Salt |
2 | cups | Half & Half |
1 | dash | Nutmeg |
¼ | teaspoon | Dry mustard |
2 | eaches | Egg yolks, beaten |
1 | pounds | Crabmeat |
8 | eaches | Patty shells, baked |
1 | x | Mushrooms & parsley/ garnish |
Saute onion and green pepper in margarine until tender. Add flour and salt and cook 2 minutes.
Gradually stir in Half & Half and stir until smooth.
Add nutmeg and mustard. Gradually add egg yolks, stirring constantly. Add drained, flaked crabmeat.
Cook 5 minutes. Serve in individual baked patty shells and garnish with fresh mushrooms and parsley.
