Southern crab royal

Yield: 8 Servings

Measure Ingredient
1½ tablespoon Onion -- minced
1 dash Nutmeg
2 tablespoons Green pepper -- finely
\N \N Chopped
¼ teaspoon Dry mustard
3 tablespoons Margarine
2 \N Egg yolks -- beaten
2 tablespoons Flour
1 pounds Crabmeat
1 teaspoon Salt
8 \N Patty shells -- baked
2 cups Half & Half
\N \N Mushrooms & parsley/
\N \N Garnish

Saute onion and green pepper in margarine until tender. Add flour and salt and cook 2 minutes. Gradually stir in Half & Half and stir until smooth.

Add nutmeg and mustard. Gradually add egg yolks, stirring constantly. Add drained, flaked crabmeat. Cook 5 minutes. Serve in individual baked patty shells and garnish with fresh mushrooms and parsley. From "The Southern Heritage Company's Coming! Cookbook" formatted by Mary Dishongh Bowles.
