Skillet zucchini combo

Measure Ingredient
3 mediums Ears corn
1 medium Onion; quartered, sliced
1 \N Red bell pepper; cut into 1/2 in squares
1 \N Clove garlic; minced
2 tablespoons Vegetable oil
3 mediums Zucchini; sliced
1 large Tomato; peeled, chopped
2 \N Jalapeno peppers; seeded, minced
½ teaspoon Dried basil
½ teaspoon Italian seasoning
½ teaspoon Salt
¼ cup Freshly grated parmesan cheese

Cut corn kernels from cobs and set aside. Saute onion, bell pepper and garlic in oil in a large skillet 5 minutes. Add zucchini; cook, stiring often for 7 minutes. Add corn, tomato and next 4 ingredients; cover and cook over low heat, stirring often, 7 minutes. Sprinkle with Parmesan and serve immediately.
