Zucchini squash

Ingredients

1can(no. 2) tomatoes; or same amount of fresh tomatoes
2poundsFresh zucchini; sliced
1mediumOnion; sliced
½poundsFresh mushrooms; sliced
1mediumBell pepper; sliced
1pack(8-oz) Monterey Jack or pizza cheese
Parmesan cheese
Garlic salt; salt and pepper

Directions

Mix zucchini, onion, bell pepper, tomatoes and seasonings. Cook over medium heat for 10 minutes. Add mushrooms and cook 10 minutes more or until vegetables are tender. Cover top with grated Monterey Jack or Pizza cheese and let melt on top. Before serving, sprinkle with Parmesan cheese.
