Zucchini squash

Yield: 6 Servings

Measure Ingredient
1 can (no. 2) tomatoes; or same amount of fresh tomatoes
2 pounds Fresh zucchini; sliced
1 medium Onion; sliced
½ pounds Fresh mushrooms; sliced
1 medium Bell pepper; sliced
1 pack (8-oz) Monterey Jack or pizza cheese
\N \N Parmesan cheese
\N \N Garlic salt; salt and pepper

Mix zucchini, onion, bell pepper, tomatoes and seasonings. Cook over medium heat for 10 minutes. Add mushrooms and cook 10 minutes more or until vegetables are tender. Cover top with grated Monterey Jack or Pizza cheese and let melt on top. Before serving, sprinkle with Parmesan cheese.
