Sausage tortilla roll ups

Yield: 3 servings

Measure Ingredient
1 pounds Bulk sausage
1 large Bunch green onions, finely
\N \N Chopped
1 medium Green bell pepper, chopped
1 cup Hash brown potatoes, thawed
4 \N Eggs
¼ cup Water
2 \N Jalapeno peppers, chopped
¼ cup Parmesan cheese
\N \N Tortillas
¼ teaspoon Red pepper

Beat the eggs and water together. Brown sausage, onion and bell pepper; drain. Add eggs and hash browns; stir 1 to 2 minutes or until potatoes are hot. Add Parmesan cheese and stir until melted and eggs are cooked. Place on a warm tortilla with lettuce, picante sauce and Cheddar cheese. Roll up. Randy Rigg Submitted By RANDY RIGG On 11-01-95
