Riviera salad

Measure Ingredient
6 tablespoons Cooking oil
2 tablespoons Vinegar
1 teaspoon Prepared mustard
½ teaspoon Thyme
¼ teaspoon Salt
⅛ teaspoon Freshly-ground black pepper
1 Garlic clove; minced
1 pounds Potatoes -; (3 medium)
½ pounds Fresh green beans
1 small Red onion; thinly sliced
1 quart Bite-size lettuce pieces
1 can Spam luncheon meat - (12 oz); cubed
1 can Pitted black olives - (3 1/2 oz); drained

Combine cooking oil, vinegar, mustard, thyme, salt, pepper, and garlic; mix well; reserve.

Cook unpeeled potatoes until tender; drain. Cool to room temperature; peel and cube. Cut beans into 1-inch pieces; cook until tender crisp; drain and cool to room temperature. Combine potatoes, green beans, and onion; cover and refrigerate until cold.

Before serving, place lettuce in salad bowl; top with vegetable mixture.

Place Spam in center; sprinkle olives over top. Pour on reserved dressing; toss well.
