Quick sardine pate

Yield: 4 Servings

Measure Ingredient
4 ounces Tinned sardines in tomato sauce drained
½ \N Lemon rind and juice
5 tablespoons Very low fat fromage frais
2 ounces Very low fat cottage cheese sieved
1 small Piece of cucumber finely chopped
\N pinch Garlic salt
\N \N Freshly ground black pepper
\N \N Cucumber twists and parsley to garnish.

Place the sardines in a bowl with the lemon rind and juice. Mash well with a fork until smooth. Beat in the fromage frais, cottage cheese and cucumber. Season to taste with garlic salt and pepper. Turn into four individual dishes or one larger one. Chill well. Garnish with cucumber twists and parsley before serving.
