Combine the soy sauce, brown sugar, sherry, scallions, cilantro, ginger, garlic and hot pepper sauce in a mixing bowl. Add the steaks and marinate several hours or overnight. When ready to cook, drain the steaks from the marinade and reserve ½ cup of the marinade. Place the reserved marinade in a small saucepot and bring the sauce to a full boil. Then remove from the heat. Meanwhile, grill or broil the steaks to the desired doneness.
Serve the steaks with the sauce. Serves 4.
