Pepper spread appetizer

2 \N Sweet red peppers, roasted
3 tablespoons Cream cheese
½ teaspoon Cumin, or to taste
2 tablespoons Finely chopped sun-dried tom
1 \N Clove garlic, minced
¼ cup Minced sweet onion (Vidalia,
3 tablespoons Olive oil
2 tablespoons Chopped cilantro
\N \N Salt & pepper to taste

*Note: Sun-dried tomatoes should be oil-packed type. Process all in food processor until well blended. Serve chilled with crackers.
