Parmesan baked potatoes

Measure Ingredient
6 tablespoons Butter or margarine, melted
3 tablespoons Grated Parmesan Cheese
8 mediums Unpeeled red potatoes (about 3#), halved lengthwise

PARMESAN BAKED POTATOES is an easy, quick-to-fix side dish. And it tastes great, too! The potatoes are meltingly soft, inside, with a crisp, golden flavorful exterior. I've made them often and am always asked for the recipe. I have Ruth Seitz of Columbus Junction, Iowa, to thank for the recipe. Do try it:

Pour butter into a 13" x 9" baking pan. Sprinkle Parmesan cheese over butter. Place potatoes, with cut side down, over cheese. Bake, uncovered, at 400-degrees for 40-45 minutes, or until tender.

Yield: 8 servings
