Oven baked corn bread

Measure Ingredient
¼ cup Butter
1 cup Cornmeal
1 cup Flour
¼ cup Sugar
1 tablespoon Baking powder
½ teaspoon Salt (optional)
1 cup Milk
1 Egg, beaten lightly

Grease 8 or 9" square baking pan or 12 muffin pan. Melt butter.

Combine cornmeal, flour, sugar, baking powder & salt in bowl. Stir together butter, milk & egg in smaller bowl & stir into dry ingredients until just moistened. Pour batter into pan or spoon into muffin cups. Bake bread in oven at 400 until golden, & wooden pick inserted in center comes out clean, 20 to 25 minutes. Serve warm.

Bake muffins until golden, 15 to 20 minutes.
