Orange-cinnamon whole wheat couscous

Orange segments in natural
Juice
1Orange or Apple juice
1Stick (2inch) cinnamon
3Whole cloves
½cupWhole wheat couscous
1teaspoonLiquid honey or to taste
2tablespoonsToasted chopped pecans(opt)

Directions

Drain juice from oranges into glass measure. Add orange or apple juice to mandarin juice if nesessary, so that it measures ¾ cup. In a small sauce pan, combine juice, cinnamon stick and cloves; bring to boil over high heat. Stir in couscous. Reduce heat to low; simmer for 2 minutes, stirring, until liquid is absorbed. Remove saucepan from heat; let stand, for 5 mins. Gently stir in mandarin orange segments and honey. Serve hot, sprinkled with pecans. 233 calories 1 fat gram.
