My-ami's meat loaf

Yield: 6 To 8

Measure Ingredient
2 pounds Lean ground beef
1 cup Soft bread crumbs
½ cup Finely chopped onions
½ cup Powdered nondairy coffee creamer
¼ cup Ketchup
2 larges Eggs ; lightly beaten
2 teaspoons Salt
1 teaspoon Dried oregano
¼ teaspoon Freshly ground pepper
1 Tomato sliced

I got these recipes from Southern Cooking cook book , it's made from corned beef .

** combine first 9 bingredients; shape into an 8-inch loaf. Place on a lightly greased rack ; place rack in broiler pan , and top with tomato slices .

** Bake at 350* for 1 hour and 20 mins. Let stand 5 mins.
