Mini peach muffins

Ingredients

2Tbls Sugar
1teaspoonBaking Powder
Pinch Of Salt
1Egg; beaten
cupMilk
2Tbls Butter; melted and cooled
½teaspoonAlmond Or Vanilla Extract
1Peach; pitted and diced
¼cupAlmonds; chopped

Directions

In bowl, combine dry ingredients. In separate bowl, combine egg, milk, butter and extract. Add liquid ingredients to dry ingredients and stir until just combined. Gently fold in peach and almonds until just combined.

Spoon into buttered mini-muffin tins and bake at 400F 15 to 20 minutes.
