Marshmallow fluffy frosting

Measure Ingredient
1 cup Sugar 250 mL
⅓ cup Water 75 mL
⅛ teaspoon Cream of tartar pinch
⅛ teaspoon Salt pinch
2 \N Egg whites 2
1 teaspoon Vanilla 5 mL

In a medium saucepan combine sugar, water, cream of tartar and salt. Bring to a boil and boil without stirring until mixture reaches 240F/116C (soft ball stage).

Place egg whites in a bowl and beat, adding sugar syrup slowly while beating, until thick and fluffy.

Stir in vanilla.
