Maple cornmeal muffins

Yield: 16 Servings

Measure Ingredient
1½ cup Self rising flour
½ cup Yellow cornmeal
1 Egg; beaten
1 cup Milk
¼ cup Cooking oil
¼ cup Maple syrup

Stir together flour and cornmeal. Make a well in center. Combine egg, milk, oil and syrup; add all at once to dry ingredients. Stir just until moistened. Grease muffin cups; fill ⅔ full. Bake in 400~ oven for 20-25 minutes. Serve warm. Makes 16 muffins.
