This recipe came out of the local newspaper a couple of years ago. This pecan pie is served at Luby's Cafeterias in Texas. Family loves this one.
In heavy saucepan, combine corn syrup, sugar, margarine and vanilla. Bring mixture to a boil, stirring constantly. Remove from heat;let cool completely. Preheat oven to 350 degrees. When corn syrup mixture has cooled, add beaten eggs, mixing well. Place pecans in unbaked pie shell.
Carefully pour syrup mixture over pecans. Bake 1 hour or until center is set. If crust starts to get too brown, place a ring of aluminum foil over crust. 8 servings. Posted to TNT - Prodigy's Recipe Exchange Newsletter by Melba Galyean <mgalyean@...> on Apr 19, 1997
