Yield: 6 servings
|1 cup||Yellow cornmeal|
|¼ cup||All-purpose flour|
|1½ teaspoon||Baking powder|
|1 each||Egg -- beaten|
|1 small||Chopped onion -- finely|
|\N \N||Oil for deep-fat frying|
In a medium bowl, combine cornmeal, flour, baking powder and salt; mix well. Add the egg, milk and onion; stir just until mixed. In a deep-fat fryer or electric skillet, heat oil to 365 deg. Drop batter by teaspoonfuls onto oil. Fry 2 to 2½ min. or until golden brown.
Drain on paper towelds. Serve warm. Yield: 4 to 6 servings.
