Measure | Ingredient |

2 cups | Stone-ground corn meal |
1 cup | All-purpose flour |
1 \N | Bunch green onions; finely chopped |
3 slices | Bacon; cooked crisp & crumbled |
\N \N | Bacon drippings |
1 \N | Egg |
1 teaspoon | Cayenne pepper |
\N \N | Salt |
2 teaspoons | Sugar |
2 cups | Water |
Mix all ingredients in order, adding enough water to make a very thick,dry batter. Roll in balls about the size of walnuts. Fry in deep hot fat (350 degrees). Brown on both sides, flipping hush puppies if necessary. Drain on paper towels. Makes about 18, or 3 per serving. Batter should be neither bone dry nor runny. Be sure fat is hot enough & stays hot while hush puppies are cooking.
