Yield: 10 servings
|6 ounces||Soft tofu|
|¾ cup||Rice or soy milk|
|6 tablespoons||Cocoa powder; preferably Dutch|
|½ cup||Sugar; (plus 2 tbsp)|
|2 ounces||Semi-sweet chocolate; finely chopped|
In a blender, combine tofu and rice milk and blend until creamy. Add salt, cocoa, and sugar, and blend until smooth. Pour mixture into a medium saucepan and cook over medium heat, stirring continuously, until hot, but not boiling.
