Grandma rachel's shrimp salad

Yield: 4 Servings

Measure Ingredient
1 pounds Fresh shrimp; in shell
3 \N Hard-boiled eggs; chopped
2 \N Stalks celery; diced
⅓ cup Onion; finely chopped
\N \N Lemon juice
\N \N Mayonnaise
\N \N Salt and pepper; to taste

Add 1 teaspoon of lemon juice to boiling water. Do NOT salt water. Wash shrimp in cold water, then boil for 5 minutes or until just pink. Remove the shrimp from the water and drain. Shell under cold running water, and devein. Dice into small chunks. Add diced celery, eggs and onion. Dress with mayonnaise, pepper and lemon juice to taste.

Note: If desired, substitute ½ bunch of green onions for the onion.
